meet linden // power muffins

hey friends! meet linden.
linden lives in northern california with her husband and 3 adorable boys. linden loves feeding her boys healthy, clean, and delicious meals and snacks. she's one of those "good at everything" type of gals you just hate to love and love to hate. we are thrilled to have her be a guest writer on our blog and can't wait to try out her recipes. here is her first post for some yummy muffins. --one more thing you should know about linden, she wears red lipstick like nobody's business. and we love it.

Hello, I'm Linden and I am so excited to be contributing to the Gypsy Threads blog! I hope to inspire you to cook and bake some healthy meals and treats. I have three hungry boys and one husband to feed, and I try to strike a balance between nutritious and delicious. I am in no way an expert, everything I know I learned from watching my mom and trial and error.

My first recipe is what we like to call Power Muffins. If you need a quick grab and go breakfast in the morning this is for you! Everyone in our family loves them!

{POWER MUFFINS}

-2 C. chopped dates

-2 C. hot water

-1⁄2 C. brown sugar

-1 1⁄2 tsp. Salt

-2 tsp. Vanilla

-1⁄4 C. buttermilk

-2 tsp. Baking soda

-1 C. oats

-2 TB. Coconut oil

-2 eggs


-1 C. flax meal

-1 C. almond meal

-1 C. oat bran

-2 TB. Wheat flour

-1 C. choc chips 


In a blender mix everything from your dates down to your eggs. Mix your flax, almond meal, oat bran and flour in a separate bowl. Add the wet ingredients to the dry and then add your cup of chocolate chips.

**Spray your muffin pans. My new favorite find at Trader Joe's is this coconut cooking spray. Adds an extra hit of flavor to all your baked goods!**

Bake at 350 for 24-25 minutes. Let cool on a cooling rack. I love to store them in the freezer so we can all grab them as we go out the door in the morning.
